We were happy to receive a challenge to eat healthier from the University of Colorado Health – Northern Colorado – the ground rules were simple: 1. Each of us has post at least one photo a week of what we’re eating; 2. The only limit on the number of photo’s we can post is no more than one per day; 3. The winner will be judged on the number of health photos they post; 4. The winner will be judged by nutritionists from CU Health – NOCO; 5. Our listeners are able to participate with their food photos by posting to our Facebook page, Twitter @tomanddevon or Instagram TOMANDDEVON.
The following photos are from Tom’s dinner April 4, 2014:
1 sliced onion, 1 green pepper sliced, 1 red pepper sliced, 4 cloves of garlic diced, 5 elk steaks, teaspoon of olive oil, salt and pepper, fresh guacamole, homemade salsa, cheese and torilla.
Heat garlic and saute veggies, when finised add elk strips, heat tortilla and add whichever ingredients sound good. Tom added all ingredients and ate two fajitas.
